Yummy Muffins!


I am not always the best baker..I guess its to precise for me!? But I do enjoy it now and then. I ran across these muffins and I am loving them. They are healthy, delicious, the moistest muffin ever and easy! Thats the kind of things I like to throw together. Good thing with these is your itty bittys can eat them as they are a hit and nutritious too! You can play around with these and throw in whatever fruit you have on hand and combinations of nuts, raisins and coconut! Let me know if you make them and what you think!


Morning Glory Muffins

2 cups wheat flour

                                                                 3/4 cup sugar

3 tsp cinnamon

2 tsp baking soda

½ tsp salt

3 eggs

¾ c. applesauce

½ c. oil

1 tsp vanilla

2 carrots shredded

2 apples shredded

1 c. crushed pineapple

½ c. coconut (optional)

½ c. raisins, craisins or nuts (optional)


Preheat oven to 350. Mix first 5 ingredients together and set aside

Combine next 4 ingredients together and mix with dry ingredients. Then add the last 4-5 things and combine all together. Fill muffin cups 2/3 up. Bake for 20 min. Makes 2 dozen muffins
